Cochinita Pibil at Mercado La Paloma

Mercado La Paloma embodies community through the unity of food and people. La Paloma is truly a unique space with nonprofit offices on the second floor and various restaurants and businesses on the first floor. The gem of La Paloma is Chichen Itza, which prepares Mexican food from the Yucatan region. Chichen Itza’s specialty is their cochinita pibil, succulent pork marinated with achiote, sour orange juice, and spices served atop a banana leave and finished with pickled red onions and a habanero pepper. Their cochinita pibil is served alongside slow cooked black beans, rice, and tortillas rolled in aluminum foil to keep them warm.
